Risotto Milanese with
Mushrooms
Ingredients |

3/4 c. rice,
1/2 c. white or red wine,
1/4 c.
onion, finely chopped,
Pinch of saffron, |
2
Tbsp. grated Parmesan cheese.
Pinch of saffron,
1/3 c. olive
oil,
1/2 tsp. salt (or more to taste), |
| Sauté onion in oil until slightly golden, then stir in the
rice and continue stirring for a couple of minutes until rice is slightly
brown. Mix saffron in wine and add to rice and stir. After wine has
evaporated, add the beef broth and stir. Put lid on and boil slowly,
stirring occasionally.
When almost ready, add 1 cup previously cooked
"Mushroom Al Funghetto" and stir a few times. Remove fro heat and add the
parmesan cheese" |

Chicken With Wine-Mushrooms
Ingredients |

Chicken Breast, pounded thin and tender
Bread Crumbs (Progresso)
Eggs, beaten with Parsley
Salt and Pepper to Taste |
Basil
Garlic, diced
Mushrooms, sliced
1 1/2 cup wine
Margarine |
| Place
margarine in a skillet on medium heat. Dip chicken in eggs, then
into the breadcrumbs. Brown on both sides. Remove from
skillet and set aside. Sauté the garlic, mushrooms and basil
together. Add wine. Place chicken back in skillet and with a
spoon make sure that all the chicken pieces are covered with sauce.
Cover the skillet and simmer on a low heat for 20 minutes |
